A letter is chosen. Everyone tries to fill each category with an answer beginning with that letter before time runs out. Compare answers at the end.

Scoring idea
Give 1 point for a valid answer, 2 points if nobody else wrote the same answer, and 0 for blanks. Or ignore scoring entirely and argue about whether “yak” counts as farm animal.
Do not get stuck on one row
If an answer does not come quickly, move on. Returning later with six other categories completed is better than spending the whole round trying to remember one vegetable.

Categories is best when the scoring matches the group. Award a bonus for unique answers, agree whether proper names count, or skip points completely and use the timer simply to create a fast shared challenge.
